Tamarind paste has a distinctive, prunelike sour flavor and is derived from the pods of large tropical trees. The fruit in the pods is soaked in hot water, then strained to form a thick paste. You can make your own with fresh or dried tamarind or buy prepared tamarind paste in most Asian and Latino markets. Though the flavor is quite different, you can substitute lime juice to achieve the desired tartness.
