Tofu skins, also known as bean curd skins or sheets, are made from the skin that forms over warm soy-bean milk that is then dried. These skins are sold fresh, frozen, or dried; the dried ones must be reconstituted in warm water to make them soft enough to use as a wrapper. They have a subtle soybean flavor and are often used in vegetarian cooking. You can find the sheets at most Asian markets and some natural food stores.
