Turmeric (fresh) is a gnarly little root, smaller than ginger, with both orange skin and flesh. It is a defining flavor in many curry powders and turns almost everything it touches a rich orange-yellow color. Fresh turmeric should be hard when purchased and is best stored in the refrigerator. You can find fresh turmeric in most Asian markets, particularly those specializing in Southeast Asian and South Asian food.
