Yuzu juice comes from the yuzu citrus fruit, which looks like a tangerine. It has a very strong and distinct citrus tartness. Yuzu juice is available at Japanese markets or online at www.amazon.com. If you cannot find yuzu juice, you can substitute lemon juice, but the flavor will not be as pronounced.
