Satsuma Imo (Japanese sweet potatoes) have lovely reddish skins and golden yellow flesh. Not nearly as sweet as American yams, Japanese sweet potatoes are delicious baked in their jackets with no seasonings at all! They are occasionally available at Oriental markets selling fresh produce; store as you would Irish potatoes. One-quarter pound has approximately 140 calories.
