(February to April) are a group of varieties grown at high density to produce loose heads that are harvested when still immature. They are at their best from February to April, a time when other greens are in short supply. Organic crops are particularly good โ€“ grown more slowly, they are smaller and more flavourful than the non-organic versions which receive regular boosts of nitrogen fertilizer throughout the winter to keep them going.
