(October to February) is the slowest growing cabbage, with deep-green, crinkly, loosely furled leaves. It can be in season from July but is at its best in colder weather. Savoy has a robust texture and flavour and is good for slow-cooked soup and stews, stuffing and roasting in wedges. It is often interchangeable with cavolo nero (black kale).
