To boil carrots for a salad (such as the Moroccan salad), leave them whole and they’ll retain more of their flavour – you can cut them up afterwards. Medium-sized whole carrots take 15–20 minutes to cook, in salted boiling water; test by inserting a sharp knife into the thickest part of a carrot – it should meet no resistance.
