A whole celeriac has a long shelf life and will sit in the bottom of your fridge for a month or more. It will be happiest loose or in a paper bag – never in plastic. Once cut, a celeriac chunk will be good for a week or so, but you may need to shave off the exposed surface if it has dried out.
