Parsnips have soft, porous skins and lose moisture faster than most other root veg. It’s best to leave the mud on as a protective coat. Store them somewhere cool and dark, or in a paper bag in the bottom of the fridge, and they’ll keep for a good 2–3 weeks. Even if they’ve gone a bit floppy, their flavour is generally still fine.
