Spaghetti Squash stays true to its name and the flesh of this bizarre variety falls into spaghetti-like strands as it cooks. It’s no good for recipes that call for chunks of squash, but good if treated like spaghetti and served with sauce. It also works served cold and dressed as a salad (see box).
