Swede responds well to a long, gentle simmer and its peppery flavour pairs especially well with beef. For a Turkish-style vegetarian option, gently simmer cubes of swede with plenty of olive oil and lemon juice. Or add tiny cubes to pearled spelt or barley and cook like a risotto, but for a bit longer.
