You can tackle most vegetables with a sharp knife and a sturdy chopping board. Below are a few other recommended items for your vegetable tool box.
  • good vegetable scrubber
  • big, heavy, sharp cook’s knife for chunky veg like squash
  • small serrated knife for tomatoes
  • swivel peeler (for potatoes)
  • box grater (for cheese and veg)
  • very fine, sharp grater or Microplane (for Parmesan, horseradish, ginger, citrus zest and nutmeg)
  • stick blender (for blitzing soups)
  • kitchen paper (for draining vegetables and fried food)
  • salad spinner (to get salad leaves dry without mess)
  • pestle and mortar (for grinding spices and smashing garlic)
  • potato ricer or masher
  • cast-iron griddle pan (for griddling; especially useful if you do not have a good oven grill)
  • mandolin (for thinly slicing veg; very useful for gratins amongst other things)
  • spider or wire skimmer/strainer (handy for fishing out batches of greens when blanching, or when deep-frying)
