Originally brown sugar was partly refined sugar and the process was halted to keep some of the molasses in it, but now it is composed of refined sugar with molasses added back to it. Brown sugar is sold as light brown (or golden) and dark brown. The difference is in the strength of the molasses taste, which can impact recipes. It is important to pack the measuring cup with brown sugar for an accurate measure.
