The preferred choice. This pin has no handles, so you roll with your hands directly overtop the pastry, so you can feel it as you roll. The gentle curve allows you to shape the dough effortlessly, with very little spring-back because you are not forcing the dough in a back-and-forth direction. Perfect for all pastries, but best suited to delicate rolling tasks.
