We didn’t quite realize until writing this cookbook (and trying to articulate which type of coconut we were talking about!) just how many types of coconut products there are. These are the different types we call for in our recipes.

Coconut compound: Found in our Summer Fling Coconut and Lime Coffee Cake, this is a flavorful blend of coconut pulp and coconut cream. It can be found online or at specialty baking shops (note that it’s not the same thing as coconut butter or puréed coconut).

Desiccated coconut: This is ground (rather than shredded) coconut found in our Black and White Magic Brownies. Sometimes shredded coconut is confusingly labeled as desiccated coconut. Making sure your package has the word fine on it will ensure it’s the very short, ground coconut that you’re looking for.
