We are fans of muscovado brown sugar. Muscovado is cane sugar that is refined less than white sugar, leaving much of the molasses in the end product and a great deal more flavor. Organic brown sugar is not the same as muscovado. Typical American brown sugar is actually cane syrup refined to white sugar, with molasses removed as a byproduct of the process and then some molasses added back. This explains the availability of light brown sugar and dark brown sugar. If you can’t get muscovado brown sugar, use dark brown sugar.
