This is a sophisticated French torte of soft hazelnut meringue layers and chocolate and coffee buttercream. It’s one of my and Frank’s favorites but, it seemed, hardly anyone else’s. We sold it for years, regardless. We finally let it go and just bring it back from time to time or beg the cake team to make it for us when we’re celebrating something special. I think we underestimated the power of the name. We wanted to keep its real name, but perhaps the lack of familiarity scared people off from even asking about it. It also looked small in size, and although it was rich and full of flavor, perhaps it didn’t appear to be of great value.
