Cut 2 red, green or yellow peppers, or a combination, by standing them up, stem upward and cutting away the four walls of the pepper. Slice away the bottom. Cut the pepper pieces in 7.5mm strips. Oil a swiss roll tin and add the pepper strips. Salt lightly. Bake in a preheated 190°C/gas mark 5 oven on the centre rack, stirring occasionally, until soft but not charred, about 20 minutes. If the pepper strips char at all while baking they’ll turn to cinders on the pizza.
