Some of the best varieties come from Uji, a storybook location that is known for its shrines, temples, and premium matcha. You don’t have to buy the most expensive stuff, but you should pay attention to color (it should be bright green) and your matcha should provide a hint of natural sweetness beneath that incredibly earthy, tannic flavor.
