I am obsessed with this Korean side dish staple, which is composed of salted and fermented vegetables. Usually, Korea favors pickled napa cabbage and crisp radish, though there are many variations. The unique marriage of salty, spicy, fermented and tangy flavors is bold and hugely addictive. I always have a jar in my fridge at all times.
