You know these dried seaweed sheets from your sushi, but I’m sorry if your nori has often been chewy. The truth is that most sushi joints, sometimes even the pricey ones, simply do not have very fresh nori. You’ll know when you find the good stuff, because fresh and well-preserved nori is so crisp and delicate that it melts in your mouth. If you buy nori, make sure it is properly stored.
