There are dark and light versions of sesame oil due to the toasting process. The darker it is, the stronger the flavor. So, it is up to you how much sesame flavor you want in your cooking or pastry. Remember: even though it smells amazing, a little sesame oil goes a long way. Be cautious, because you can always add more, but you cannot add less.
