A Japanese mint leaf that is less minty and intense than normal mint, but is full of herbaceous subtlety. Both green and purple-red varieties are traditionally used in savory cuisine, but I love using shiso in pastry due to its soothing and refreshing minty goodness. Try using shiso in mojitos as well.
