Everyone knows soy sauce as an Asian staple and a savory icon. But Iโm including it here in order to point out once again just how instrumental a drop of soy can be in accenting your pastry. You know how a glass of chocolate milk is instantly improved by a tiny pinch of salt? Soy sauce works the same way in pastry, only to a far greater effect. A little soy sauce can amp up the salty edge in a deep and nuanced way.
