This mashed and sweetened bean paste is used in myriad desserts across China, Korea and Japan. These pastes are graded according to consistency, sweetness and color. The texture kind of reminds me of a Fig Newton’s filling, but the quality and flavor of anko surpasses any supermarket snack. Its subtle depth and seductive mouthfeel was made for filling the middle of delicious things.
