It’s like a lemon on steroids. It’s got character through its subtle bitterness and powerful acidity. It somehow makes any citrus dish even better. I only use unsalted, unsweetened yuzu juice. If you happen to find fresh yuzu, you can use the zest or candy the peel, but remember this: yuzu tends to yield less juice than lemons. That’s why I buy it by the bottle.
