Assembling a Cake in a Cake Ring

Strawberry and White Chocolate Mousse Ladyfinger Cake

  1. Peel the parchment paper away from the cake disk. Cut a round of cardboard just large enough to fit snugly in the cake ring.

  2. Trim the cake disk to the size of the cake ring, then trim around the cake disk with a pair of scissors so that it is 1 inch less in diameter than the cardboard.

  3. Line the inside of the cake ring with plastic wrap, cardboard disk, and cake disk. Insert a strip of ladyfingers around the sides of the cake.

  4. Insert another strip of ladyfingers in the cake and trim any excess from the end of one of the strips so there is no overlap.

  5. Lightly brush the cake disk and the insides of the ladyfingers with simple syrup.

  6. Ladle in the mousse.

  7. Refrigerate the cake, then loosen with a hot wet towel around the cake ring and gently push the cake up and out of the ring.

  8. Arrange a ring of strawberries around the edge of the mousse.

  9. Arrange the remaining strawberries in a ring going in the opposite direction from the first.

  10. Brush the cake with hot glaze or preserves.
