Most pastries are made by combining butter and flour, sometimes sugar, and sometimes a liquid such as water or egg. Much of what gives each pastry its distinctive flavor and texture comes about from manipulating the ingredients slightly (or sometimes not so slightly) differently Pastries can be sweet or savory, but most of the pastries here are sweet—in part because so many of them contain fruit.
