Using the Dough Hook to Knead Dry Dough

  1. After water, yeast, and flour have been mixed and the dough has rested, add the salt and mix on low speed for 3 minutes. If the dough is clinging to the hook, turn up the mixer to medium or high until the dough is spun off the hook and slaps against the sides of the bowl.

  2. Mix the dough on medium speed for 5 to 10 minutes, until smooth. You can cut the dough in pieces to get the kneading started.
