Buy spices whole and roast them briefly in a dry heavy-based frying pan over medium heat to enhance their flavour and make them fragrant. To grind them, use a spice or coffee grinder, or crush them in a mortar with a pestle. Their flavour and fragrance deteriorates over time so it is important to buy them fresh, in small quantities, and use them as soon as you can.
