Fresh water chestnuts are becoming ever more widely available in Australia and once you’ve eaten a fresh one it’s very difficult to go back to the tinned variety. You simply peel off the outer skin, rinse the chestnut under cold water and it’s ready to use. If you’re keeping them peeled overnight, it’s best to keep chestnuts in a little bit of salted water otherwise they will ferment very quickly. Water chestnuts add a wonderful crunchy, starchy flavour and texture to stir-fries, soups and salads.
