The tender, young shoots of the bamboo are harvested when they first appear at the base of the bamboo plant. The bamboo shoot is covered with dark coloured leaves, which should first be peeled off before use. Inside, the flesh is cream-coloured. Fresh bamboo shoots must be boiled for at least 1 hour before it is ready for use. After boiling, leave the shoots to soak in water until required. Bamboo shoots are available fresh, canned or pickled.
