Known to Malay-speakers as buah keras, candlenuts are hard, yellow, waxy and largely tasteless. They are generally the size of a shelled walnut and are typically pounded and added to curries to thicken them. If unavailable, use macadamia, brazil or cashew nuts instead. Substitute 1 macadamia nut for 1 candlenut; 1 brazil nut for 2โ€“3 candlenuts; and 2 cashew nuts for 1 candlenut.
