Cardamom is the world’s most expensive spice after saffron. Cardamom pods are the dried fruit of a perennial plant of the ginger family indigenous to Sri Lanka and south India. The pale green oval pods, which are the best variety, contain 15–20 brown or black seeds. The white pods are simply green pods that have been bleached in the sun.
