Coconut milk is not the water found in the middle of the coconut; rather it is the liquid extracted from soaking fresh grated coconut in water and then straining it. There are two types of coconut milk: thick coconut milk comes from the first squeeze of grated coconut with a small amount of water, while thin coconut milk is obtained from the second squeeze with considerably more water.
