Cumin powder is derived from pounded cumin seeds. Like coriander, these small, rice-like grains are called seeds even though they are actually the dried fruit of a plant (Cuminum cyminum) that belongs to the parsley family. Cumin, which Malay-speakers known as jintan putih, is a key ingredient in ready-made curry powders and is very pungent. Whether whole or ground, use it sparingly.
