Dried prawns are boiled or steamed and then shelled and dried. The best dried prawns are a deep salmon pink. They should not be hard or smell strongly of ammonia. Dried prawns are used—either whole or pounded— in several Asian cuisines, both as a flavouring agent and as the main ingredient.
