The vermicelli-like glass noodles are made from mung bean flour. They are also called cellophane noodles or bean starch noodles. They should be soaked in water before being added to boiling soups or stir-fried vegetables. Glass noodles are used in Japanese, Thai, Burmese, Vietnamese, Chinese, Malaysian, Filipino and Indonesian cooking.
