Known as cili boh in Malaysia and Singapore, this chilli paste is made by blending softened dried chillies with water. Ready-made ground chilli paste is available at supermarkets. To make, wash, seed and soak about 12 dried chillies. Place softened chillies in a food processor with 3–4 Tbsp water and blend until smooth.
