These tiny black seeds are an essential spice in South Indian cooking. They are tempered with a dose of hot oil, mustard seeds, curry leaves and sometimes dried red chilli. Mustard seeds have a slightly bitter aftertaste and this quality makes them perfect for adding to pickles.
