Rice vermicelli is sold dried or fresh. Made from ground rice, these noodles are also known as bee hoon in Hokkien. Dried rice vermicelli have a long shelf life and can be kept for a few months is stored well. It has to be soaked in water or scalded in hot water and drained to soften before used in cooking.
