The tough, aromatic salam leaf, similar in shape and size to the bay leaf, contains volatile oils. The fresh leaves are used whole in Indonesian curries to impart a unique flavour. If salam leaves are unavailable they may be substituted with curry leaves or bay leaves, which are somewhat similar in flavour.
