Soy sauce, used to flavour and colour food, is made from salted soy beans. There are three types of soy sauce. Light soy sauce is the type most commonly used for flavouring. Dark soy sauce (pictured) is a black, thick sauce with a stronger flavour. It is generally used in stews for its flavour and colour. Sweet soy sauce is a thick, sweet sauce used in dishes of Javanese origin.
