Brown sugar is granulated sugar that has molasses added to it. Light brown sugar has a small amount of molasses, while dark brown sugar has larger amounts of molasses added. Molasses adds caramel notes to baked goods and keeps them very moist and chewy. Molasses is also acidic in nature, which means that brown sugar can be used in recipes with baking soda to activate its chemical reaction (we will address this more in depth in the leavening section). Light and dark brown sugar are typically interchangeable in baking, according to your preference for flavor. I typically use dark brown sugar because I like the rich flavor it imparts.
