  • Definition: Bulk-ferment refers to the stage of a yeast dough after it has been mixed and kneaded but before it has been shaped. You might also hear this called “the first rise.”
  • Tips for Bulk Fermentation: Bulk fermentation is complete after the dough has at least doubled in size and, if you press a finger into it, the indentation remains.
