Brown sugar is the one ingredient in baking that requires a little bit of packing down when measuring. Brown sugar is moist and sticky and can clump up a bit when stored. Lightly pressing it into the measuring cup will help press out any air pockets to help with more consistent measuring.
How to Measure Brown Sugar by Volume
  1. Scoop the brown sugar out with your measuring cup, overfilling the cup slightly.
  2. Lightly pack down the brown sugar until it feels like it is filling the measuring cup. If you have excess, use a knife to level it off.
