Brown sugar is the one ingredient in baking that requires a little bit of packing down when measuring. Brown sugar is moist and sticky and can clump up a bit when stored. Lightly pressing it into the measuring cup will help press out any air pockets to help with more consistent measuring.

- Scoop the brown sugar out with your measuring cup, overfilling the cup slightly.
- Lightly pack down the brown sugar until it feels like it is filling the measuring cup. If you have excess, use a knife to level it off.
