Liquid ingredients are one category where it is more commonly accepted to measure by volume, even by professional bakers. Liquids cannot be compressed the way solids can, therefore it is a bit easier to be accurate when measuring liquids by volume. That said, weight is always more accurate, and the recipes in this book will include both weight and volume measurements for all ingredients, including liquids.
How to Measure Liquid Ingredients by Volume
  1. Make sure you are using a liquid measuring cup (one with a pour spout and markings on the side) rather than a dry measuring cup.
  2. Get down to eye level with the cup and pour the liquid in until it reaches the mark of measurement. Looking at the mark from above will not give you an accurate measurement.
