This may be done by hand, with a heavy-duty mixer equipped with a dough hook, or with an ordinary electric mixer (for the first part of the mixing only). When a dough is freshly mixed (by any method) it will be sticky. It is only after it has been kneaded that it develops smoothness and a lively feel.
