In an ideal world I wouldn’t freeze cakes as nothing beats a cake freshly baked from the oven. But I realise that life doesn’t always make this possible, and you may well need to plan ahead. Freeze cakes un-iced and ice them when defrosted. Buttercream can be frozen separately.
